Unripe mango is called tor in Goa. When it is grated with coconut, chilies, and garlic, what you get is a chutney which is tangy, spicy. This is best enjoyed with steaming rice, bhakri (ragi bread), or gavan (rice dosa).

Phansachi bhaji is made from slightly unripe jackfruit and is locally known as shekk. It’s cooked with spices, grated coconut, and a mustard seed tempering and traditionally served on Macaranga peltata leaves for a naturally aromatic touch.
