Let's make some delicious, traditional piping hot 'Filos' in Goa

BANANAS

Bananas are one of the main ingredients of a popular tea time snack in Goa, called Filos. To prepare Filos, overripe bananas are first mashed well in a bowl.

SUGAR & SALT

Salt and sugar is added and gives the dish just a hint of sweetness, while also enhancing the flavour.

EGGS

In a separate bowl, eggs are beaten along with sugar and a pinch of salt. They are beaten till well mixed, but not fluffy.

MIXING

The egg mixture is then added to the mashed bananas. Flour is added next, and everything mixed together gently.

MILK

Milk is poured slowly into the batter, which is then mixed again. Water can be added if the batter is too thick.

FRYING

Add a dash of ghee in a pan. When heated, rounds of batter are ladled onto the pan (into mini pancakes). These are cooked on both sides.

BON APPETIT!

When done, drain off the excess ghee. Serve hot with a piping hot cup of tea.
