Monserrate (musorad) mangoes are excellent for making mangada, a flavourful local mango jam.

MANKURAD, MALGUESO

Surplus, or undersized, malcurada (mankurad), malgueso (malges) are often whipped up into mangada.

Carreira (korel, karel) mangoes are added to masala and oil to make delicious pickles.

MALGES

Half mature malges are combined with pepper, chillies, cloves and raisins to produce a sweet chutney and sweet pickle.

RAW SEEDLING MANGOES

Raw seedling mangoes (before the seed gets woody) are used to make the local favourites, chhepnne tor and korom.
