

After an incredible debut in Mumbai, the exclusive one Saturday only collab by La Panthera and Praça Prazeres is heading to their next stop. Any guesses where? Yup, its Goa’s turn for a sensational experience this weekend.
In their first edition Chef Ralph from Praça Prazeres brought his crowd-favourite dishes to La Panthera which led the team to thinking: why not flip it around?
“Both our guests—whether at La Panthera or Praça Prazeres—have one thing in common: they love great European food. So now, we’re bringing all the La Panthera crowd-favourite dishes to Praça Prazeres. Same vibe, same energy, just in a new setting for one Saturday only,” says Chef Manuel Olveira of La Panthera.
Goa being one of his favourites—the energy, the people and the food scene—Chef Manuel tries to visit the State at least twice a year, but this is the first time he is bringing La Panthera to Goa which makes this trip even more special.
“I’m excited to share some of our most-loved La Panthera dishes with Goa and to have them served up in the beautiful setting of Praça. It’s the perfect blend of European flavours from La Panthera, paired with the incredible food, cocktails, and hospitality that Praça Prazeres is known for,” he shares.
The menu is a mash-up of favourites from both restaurants, including a dish they’ve never served before, pastel de nata pizza.
“At first, it sounds out of the box but that’s the point. It’s a delightfully indulgent dish that straddles dessert and main flaky, eggy custard on a fermented dough base with hints of cinnamon and burnt sugar. It’s not a tart. It’s not a pizza. It’s a moment that’s been created by both of us just for that day,” the chef reveals.
For Saturday, Chef Manuel is bringing a crowd-pleasing line-up to Goa, starting with his signature pizzas. The 48-hour fermented Neapolitan-style dough has a loyal following in Mumbai, especially the tartufo, with wild mushrooms and truffle and La Panthera loaded with burrata, ‘nduja, pork sausage, and basil.
“I’m curious to see how Goa responds,” says the chef, revealing more personal favourites. He picks roasted beetroot carpaccio, charred octopus and braised pork on sourdough pancakes when it comes to small plates, and simple but all about technique pici cacio e pepe, grilled sea bass and a roast chicken finished with sweet corn purée and truffle jus for mains.
And for dessert, it’s the cult favourite tiramisu La Panthera way and the latest hit hazelnut profiterole with ice-cream poured over with a warm chocolate sauce. “Can’t wait to bring all of this to Praça and see how Goa eats it up,” Chef Manuel adds.
And about cooking in someone else’s kitchen? Chef Manuel says it feels familiar yet so different. The burners hiss differently, the salt lives in another corner, and you’re half a beat off from your usual rhythm.
“But Ralph runs a tight ship, and we’ve planned this down to the last garnish. The dynamic shifts, yes, but that’s the thrill. You lean in, adapt, and let the kitchen teach you something new. That’s when the real fun begins in all the organised chaos,” he says.
“We speak the same language—flavour, detail, instinct. There’s trust, zero ego, and a shared obsession with getting it right. His (Chef Ralph) food always has soul,” adds the chef.
