MONSOON DELICACY

With the arrival of the rains, Goa’s paddy fields come alive, not just with green shoots, but with nature’s hidden delicacy: snails, known locally as conges in the local language, Konkani.

SEASONAL DELIGHT

As farmers wade through slushy fields to sow rice, they also gather these monsoon snails, a traditional treat that graces many Goan kitchens during the rainy season.

RARE & ROOTED

Conges appear only during the monsoon months. Their brief season and earthy flavour make them a prized local ingredient.

PREMIUM CATCH

Sourced mostly from the fields, these snails are sold on the roadside in bags, each bag containing around 70 to 100 snails, depending on size. Demand is high, and prices reflect their rarity.

FADING FORAGE

However, the yield has seen a steady decline over the years, due to pesticide use and mechanised farming practices, making conges even more precious.

MORE THAN A MEAL

For Goans, snails aren't just food. They're heritage, ritual, and rainy season nostalgia.

A DELICACY WITH CARE

Cooking conges is an art passed down through generations. They require careful cleaning and preparation. Improper cooking methods can cause stomach upset, making traditional knowledge essential.
