Sweet and sour

There are several myths about citrus fruits like oranges, grapes, lemons, grapefruits, etc. Like when is the right season to consume them or should one have citrus fruits when one is suffering from cold and cough and so on.  Anirban Dasgupta, executive chef, Hyatt Regency, Pune, says that most people believe that summers are the best time to consume citrus fruits. “But winter is the best time to consume them because fruits are freshest this season not just in India but across the globe. During winter, oranges and grapes are fresher so they make great desserts and also look good.” He further adds that women shouldn’t be consuming citrus fruits during pregnancy. “I have seen this in my own family when the doctor has asked the lady not to have any such fruits during pregnancy. There are chances of getting complications during this period. Also, those suffering from arthritis should avoid citrus fruits. And also stay away from them if you are suffering from cold and cough.” He further adds that most Indians are not season-centric people and consume all types of vegetables and fruits throughout the year. This, he says is a complete no-no. “Hotels and restaurants are becoming very conscious and are focusing on fresh market produce,” he informs.   He further adds that while consuming citrus fruits, one needs to remove the pith and seeds as much as possible. “Otherwise it becomes bitter. Always consume the juice of citrus fruits as soon as possible. Don’t keep it for too long because citrus fruits have short life span.” He says that one needs to be careful while mixing citrus fruit juices with dairy products. “You need to cool down the dish and then add the juice. A lot of people use citrus fruits as vinegar but be careful about the quantity you are using,” adds Dasgupta. The author can followed onj Twitter @DebaratiPalitSi
