This January 10, The Native Table will return with a uniquely immersive dining experience led by the passionate chef-owner of Asro Cafe, Nishtha Agrawal.
Set in the perfect ambience of Museum of Goa (MOG), Pilerne, the event will showcase a fermentation-forward menu inspired by techniques of fermentation from around the world.
Speaking about the upcoming event, Nishtha shares that it’s an exciting convergence of food, memories and history.
“Fermentation has always been integral to my culinary journey — it’s a transformative process that deepens flavours and brings incredible health benefits,” she mentions.
Growing up in Rajasthan, fermented staples like kanji and achaar were always present in her meals and the 7-course fermentation-forward menu at the event reflects this heritage while integrating global techniques to showcase the versatility and vitality of fermentation.
“It’s my way of honouring these traditions and presenting them through a modern lens,” adds the chef.

The menu will highlight miso, apple cider vinegar, pickling and lacto-fermentation, emphasising sustainability and the art of fermentation. Key ingredients like kale, and amaranth will bring rich umami, vibrant nutrition, and depth of flavour to the menu.
Goan influences will also appear in elements like kokum, featured in the Pickle Brine and Kokum Cooler.
“Every dish on the menu is rooted in a personal or cultural story — whether it’s the memory of enjoying puchkas on bustling streets or waking up to the aroma of dosa batter fermenting in my childhood home,” says Agrawal.
Throughout the event, she will share anecdotes about these dishes and their evolution, weaving a tapestry of nostalgia and innovation.
The event also promises a guided tour of the Histories of Goa exhibit that will set the tone for the evening, fostering a sense of connection and context.
Furthermore, DesmondJi’s cocktails will add a vibrant and sophisticated touch to the evening, offering two signature creations — the Spicy Pineapple Sour and the Strawberry Basil Mahuatini — that will enhance the flavours of the menu while elevating the overall dining experience.
Although having hosted events at Asro Cafe and intimate supper clubs, this is Nishtha’s first time blending culinary storytelling with art and cultural exploration on such a grand scale.

“I’m most excited for guests to experience the harmony of tradition and transformation. Through the menu, storytelling and the Histories of Goa exhibition, I hope they feel a deep connection to the narratives of food, culture and memory,” she says, extending an invite to all.
