The classic Goan Charlie at Hilton Goa Resort's Doce features the perfect combination of teas and delicious local delicacies with a new twist.

So what is Goan Charlie all about? The Goan Charlie is a curated menu which consists of vegetarian and non-vegetarian local delicacies that have been created with a twist by using the Goan bread (pav) as a signature element. Goan Charlie was introduced after the success of the yearly The Poder Chronicles.

Now coming to the specially curated menu of Goan Charlie. Firstly, we need to say that most of the delicacies are prepared with the traditional Goan bread (pav) and recreating a fusion of flavours to give you a new experience of savouries under the luxury umbrella.

A few delicacies on the tiered stand are Maka Kullyo Zai, a slow-cooked xacuti crab, tempered with charcoal-grilled bread with a combined element of traditional cuisine and a modern twist.

Avo’s Kakon is the famous ‘bangle bread’ AKA kakon. Avo’s Kakon is a vegan superstar which is mock meat prepared in a cafreal style with avocado, salsa, edible flowers and microgreens.

Pork-a-que is a barbeque style match made in heaven, where the poie bread is wrapped in a shawarma style and filled with juicy barbeque pork, slow cooked with local spices.

Maas-ka-pao is a canapes and the local maska -pav combination. The Maas-ka-pao, also known as the buff tart, is a canape with a tart base made from crushed pao crumbles and a filling of buff vindaloo in a liquefied pate, aged with 10-year-old artisanal feni and topped with a feni sphere.

Bãlcao in Saipem: we all know the Goan-Portuguese bãlcao is a defined porch area that protrudes out of local homes in Goa, with seats on either sides. This dish was curated to the neighbors of Saipem. It’s a vegetarian delicacy prepared with sweet potatoes and coconut pearls as well as the popular Goan bread (unddo)
