Tucked away in the quaint village of Assagao, Gunpowder sets the mood for those craving quiet tranquillity. Based in an old Indo-Portuguese house, the restaurant has an inviting feel.
“It’s a curated blend of rustic heritage, bohemian flair, lush greenery and boutique charm—invoking the warmth of home, the creativity of a studio and the inviting ease of a garden retreat,” says Satish Warier, founder of Gunpowder.
FALLING IN LOVE WITH GOA'S RHYTHM
In fact, it was Goa’s laid-back charm that inspired the move to the State. Originally set up in Delhi’s Hauz Khas Village, where it quickly gained a following for its bold cuisine, Satish Warier felt the city no longer matched the pace or spirit he envisioned.
Seeking a slower, more grounded setting, he relocated to Assagao, where Gunpowder found a new rhythm and reopened in full swing by 2013.
“This was more than a business decision; it was a major lifestyle choice. I chose ‘the possibilities only Goa holds’ over the ‘stresses of city life', even though the Delhi location was more profitable,” the founder shares.
“My personal pursuit of a better quality of life reflects every aspect of Gunpowder. The slow-dining and relaxed ambience truly reflect my desire for a less hurried, more mindful life, creating an authentic and chill atmosphere that fits Goa's vibe perfectly,” he adds.
PENINSULAR ON THE PLATE
And complementing this natural rhythm is the restaurant’s thoughtful compilation of distinctive dishes drawn from across the peninsular region of India, such as states like Kerala, Andhra Pradesh, Telangana, Tamil Nadu and Karnataka.
Gunpowder actually refers to a spicy South Indian blend known as milagai podi or karam podi, made from roasted lentils, chilies and spices, traditionally eaten with idlis, dosas or rice. At the restaurant, this fiery mix is reimagined with regional influences from across South India, blending bold flavour with a modern twist—capturing the essence of tradition, heat and originality.
“There are no must-tries because everything is meant to be. Each recipe is a unique creation, inspired by traditional flavours but interpreted with a fresh perspective. From fiery coastal curries to slow-cooked stews and vibrant vegetarian preparations, every dish is chosen to complement the other, building a layered and memorable dining experience,” explains Satish.
And just as the food draws on the rich traditions of South Indian cuisine, while allowing space for creativity, the cocktails too take familiar ingredients—spices, herbs, tropical fruits—and reimagine them using modern techniques.
“From infusions of curry leaf and tamarind to syrups made from jaggery or kokum, each cocktail is thoughtfully built to complement the flavours on the plate. The idea is not just to serve drinks alongside the food, but to create a fluid conversation between what’s in the glass and what’s on the table,” he says. Their beer selection also follows the same principle of quality over quantity.
With a pricing that reflects a focus on attention to quality ingredients, thoughtful execution and an elevated dining atmosphere, it’s somewhere in between offering value without being overly casual or overly upscale.
