
Like a hotpot consisting of different ingredients, Goa’s culinary scene is a mix of different flavours, techniques and cultures. And lately, adding its own unique twist to what’s already existing, is JSan bar and kitchen, a new izakaya gem that’s opened its doors in the coastal village of Anjuna.
Just like Japan’s popular izakayas, JSan specialises in ramen and has a strong cocktail program wherein the drinks complement the food. So, whether you're a fan of a fusion of Japanese flavours and Goan influences, or looking to try something new, you need to drop by JSan.
Having worked at Michelin starred restaurants in New York, JSan was born out of founder, Vishesh Jawarani's, passion’s for Japanese pub grub and ramen.
Opened in January this year, the restaurant’s name is derived from his surname Jawarani combined with San, a Japanese honorific used as a mark of respect.
The adventure at JSan’s begins right at the threshold where a huge torii gate welcomes you and sets the tone for what to expect inside. The water fixtures and lush green area in its surroundings further creates a sanctuary.
Inside, the design is minimalist and elegant, the restaurant embodies the principle of wabi-sabi.
Be it their kintsugi-inspired flooring, where fractured tiles have been lovingly reassembled or the use of yakisugi, the traditional art of charring wood that’s visible on the tables, you can’t help but notice the little details that make the space so unique.
The restaurant is open exclusively for dinner, where you can try their signature ramen bowls and small plates, including gyoza and kaarage or their slow-cooked tonkotsu ramen bowl, all curated by Chef Vishesh himself, who feels cooking isn’t just about making food, but about a purpose.
“My passion drives me to work even 17-hour work days with ease, and I have made it my life’s ambition to expose the Indian audience to the allure of Japanese pub-grub and elevated dining. JSan is just the start,” the founder-chef says.
Although due to the delicate balance of broths that don’t traditionally pair with alcohol, ramen and izakayas rarely coexist, but at JSan, it’s a bit different.
The beverage menu has been curated by mixologists Nitin Tewari and Suyash Pande, and has fresh, light and palate-cleansing flavours, incorporating Japanese ingredients alongside local Indian botanicals.
Moreover, legacy and heritage play a big part at the restaurant. Brick moulds from Chef Vishesh’s great-grandfather’s brick mills adorn the walls, while sculptural wooden elements, crafted by his father, lend an intimate touch.
The chef’s dedication to craftsmanship is reflected in the bowls, each one handcrafted by Shaili Sutaria. At Jsan, no two bowls or plates are alike, adding a unique touch to every dining experience.
