There’s a quiet sophistication about Janot that feels rare these days. Chef Avinash Martins has gone from spotlighting Goan ingredients to telling broader, ingredient-first stories — each dish here is thoughtful, restrained and deeply flavourful. 

The burnt pork belly with sesame and chimichurri hits you with contrast: fatty and charred, nutty and bright. 

The seafood medley with fennel fume is a tribute to Goa’s shores, elevated without being precious. Add to that panoramic views of the river, botanical interiors, and an island bar sculpted from marble, and you’ve got a destination worth dressing up for.

OUREM, Fontainhas

Equal parts time machine and cocktail bar, Ourem is a three-level experience tucked inside a gorgeously restored house in Panjim’s Latin quarter. The vibe is vintage elegance with a twist: think old Goan recipes with fine-dining finesse, and cocktails that pull from local produce and spice racks. 

The prawn balchao has bite, the kingfish para is pure nostalgia, and the drinks? Complex, aromatic, and beautifully balanced. Don’t skip the Portuguese Paloma. Bonus: there’s a hidden speakeasy behind a bottle wall — because why not?

An old favourite reborn. The Sangolda edition of Spice Goa is sleeker than its Mapusa sibling, but stays true to the roots: fresh seafood, well-spiced gravies, and thalis that are legendary for a reason. 

There’s a fuller menu here — Asian, Indian, Continental if you must — but the real magic lies in the clams, the pomfret wrapped in banana leaves, and the mackerel that’s cooked just right. A solid option when you’re dining with both spice-lovers and the mildly fussy.
