More than just a meal, ‘From Burma to Bardez’ is a storytelling experience, where talented chefs are coming together to craft an evolving a la carte menu across two unforgettable evenings.

Each night features inventive, region-fluid dishes with hyper-local, seasonal ingredients, a must-try experience for food lovers and culinary explorers, alike.

JUNE 14: THE BURMA DISPATCH

On the first day, the bold flavours from the Burmese culinary world will take centre stage as Chef Lady Googoo, a nomadic, no-rules chef known for her inventive, region-fluid gastronomy, reinterprets classics with her signature flair.

She will bring to the table appetisers like Chickpea Tofu Salad, Young Coconut & Tiger Prawn Ceviche, GooGoo-Style Laphet Salad and Bagan Gourd Salad.

Each night features creative dishes inspired by different regions, made with fresh, local, seasonal ingredients.

For the mains, expect rich and soulful dishes like Mon-Style Banana & Chicken Curry, Pork Belly with Fermented Horse Gram Paste (Pone-Yay-Gyi), Bay of Bengal Seafood Stew and Braised Aubergine with Chopped Peanuts (V).

And, to end on a sweet note, don’t shy away from the Burmese Tea Ice Cream and the Sago & Coconut Cream Pudding.

JUNE 15: THE TRIPLE EDIT

Day 2 is a deep dive into heritage, intuition, and ancestral grace, led by the quietly brilliant Goan chef Shubhra Shankhwalker. Her cooking is a masterclass in seasonal awareness, rooted memory and the subtle power of Saraswat tradition.

Expect the tang of Goan ferment, the depth of coastal rhythms, and an elegant play of ingredients that speak softly but resonate deeply.

But, the evening won’t end at the table, the event also features DJ Boyfriend taking over from 8 pm, setting the vibe for a night of music and flow.

And of course, uplifting the spirits through the evening, consulting mixologist Louness Ducos will offer his signature cocktails from jackfruit-pickled Gin Martinis to coastal twists like the Anjuna Limonana.
