In the quaint village of Aldona, The Project Cafe is more than just a boutique hotel — it’s a vibrant hub where art, design and gastronomy come together.
With its curated interiors and a commitment to creative experiences, it will play host to a transformative culinary event — The Superstuff workshop by POSA Duo — on Saturday, April 19, 2025.
REDEFINING SALADS AND SMOOTHIES
Leading the workshop is Sai Sabnis, a whole foods chef, trained in health-supportive culinary arts in New York. As the founder of Posa Mindful Gastronomy, Sai has dedicated over a decade to blending fine dining with healthful eating and sustainability.
Her mission is clear — to challenge the notion that healthy food is bland. “Healthy should not be boring,” she asserts.
Salads are a fun format to build fulfilling creative meals and use exciting ingredients that connect us with the abundance around.

Joining her is Agnieszka (Agni) Rozenska, a dynamic Polish native who made India her home six years ago. With a rich background in 5-star hotel and bar management, Agni transitioned from crafting cocktails to creating “smart smoothies” — science-backed blends aimed at enhancing vitality and longevity.
At 44, inspired by her personal transformation, she champions resistance training and protein-rich nutrition, aiming to empower women to stay active and energised throughout life.
Participants of The Superstuff workshop will get to delve deep into the art of salad-making, learning to view salads not just as side dishes, but as complete, balanced meals.
