
Chef Manuel Olveira has always loved the energy, the people and the food scene of Goa, calling it one of his favourite places, and visiting at least twice a year.
Now, for the first time, he’s coming to the State to do what he loves most – share his passion for cooking and food.
Bringing an unforgettable Spanish feast to Goa, Mumbai’s La Loca Maria led by Chef Manuel, is taking over Bar Outrigger for a one-day-only tapas and cocktail experience on March 23.
With signature tapas, soul-satisfying paellas and their legendary tiramisu, all perfectly paired with Bar Outrigger’s expertly crafted rum cocktails, this is an experience none would want to miss.
Speaking about this exclusive collaboration, Chef Manuel spills the details on how it came together – after having met Arijit (co-founder of Bar Outrigger) a few months ago on a visit to Bar Outrigger, and instantly falling in love with their cocktails, particularly how they worked with rum.
“It was clear they’re doing something unique for the bar scene in Goa. I really liked their approach to mixology and how they’re helping shape the cocktail culture here. That’s what sparked the idea for this collaboration,” says the chef.
Born and raised in Spain, in a family of restaurateurs, food has always been a big part of Chef Manuel’s life. His love for cooking started with his mother, Maria, who inspired him to become a chef.
And, and after attending culinary school in Spain, he went on to work in Michelin-starred kitchens alongside some amazing chefs before moving to Mumbai and opening his own restaurants, La Loca Maria and La Panthera.
“My cooking style is rooted in simplicity. I believe in letting ingredients speak for themselves — robust, honest flavours, using the best produce we can get. At the end of the day, it’s all about making food that tastes great and memorable,” says the chef.
When it comes to Goa, he finds local Goan food incredible and some of the best restaurants in the country are right here. “I’ve always enjoyed the relaxed, fun vibe, but this is my first time cooking here, which makes it special,” he says.
As the chef highlights similarities between Goan and Spanish food, both exhibiting strong coastal influences, a love for seafood and a focus on simple, honest flavours done well, he states that they won’t be adapting their dishes for the pop-up on March 23.
“I think people in Goa will connect with the style of food we do at La Loca Maria. There’s a shared appreciation for good ingredients and flavours, and that’s something both cuisines have in common.”
With a spread that showcases the essence of La Loca Maria, served alongside Bar Outrigger’s fantastic cocktails, on Sunday, Chef Manuel will serve his signature Spanish dishes like Gambas al Ajillo, Chicken & Wild Mushroom Paella, mushroom and truffle croquettes, Charred Octopus, and La Loca Maria’s version of tiramisu.
“Guests can expect bold Spanish flavours, great cocktails and a lively atmosphere that brings a bit of La Loca Maria to Goa. We’re bringing all the crowd favourites — dishes that people love,” he says.
