Republic Day is a time to honour India’s rich history and the brave men and women who defend the nation. Inspired by this spirit, the 'BraveHeart Brunch' was created as a tribute to the unsung heroes of the Indian Armed Forces.

This Republic Day-themed event at the Hilton Goa Resort in Candolim, brings together two of India’s greatest offerings – its heroes and its food. The specially-curated menu showcases the diversity of India’s regimental cuisines, offering a unique gastronomic experience.

CULINARY TRIBUTE TO THE MEN IN UNIFORM

India’s military is made up of soldiers from different regions, each with their own culinary traditions. These regional flavours, passed down through generations, form the heart of the menu at the BraveHeart Brunch.

“The idea for the BraveHeart Brunch was born out of a profound respect for the Indian Armed Forces, who embody the spirit of unity in diversity,” explains Narasinh Kamath, executive chef at Hilton Goa.

“The specially designed brunch menu, inspired by the first edition of Regimental Zaykas, pays homage to the culinary traditions of the Indian Army’s cookhouses,” Narasinh adds.

The dishes on the menu are more than just food — they represent the unity and diversity that are central to the identity of India’s armed forces.

As Narasinh explains, “Each dish served at the BraveHeart Brunch tells a unique story — one rooted in tradition, and the deep connections between food and identity.”

The flavours found in India’s regimental kitchens are shaped by regional climates, traditions and the many foreign influences that have come over the centuries.

The Mughals, British and Portuguese brought their own culinary contributions, and these ingredients and techniques blended with local traditions to create the vibrant cuisines we know today.

The Indian Army represents the vast cultural diversity of the country, and the food served reflects this mosaic.

“Soldiers from rural areas bring with them rich culinary traditions,” shares Narasinh. “These influences form the core of Regimental Zaykas — flavours from every corner of India, unified under the banner of the Indian Army.”

CELEBRATING DIVERSITY

The BraveHeart Brunch offers a rich variety of dishes, each showcasing the unity within India’s diversity. From the robust flavours of Punjab to the subtle tastes of the northeast, every dish tells a story of its region.

At the brunch, guests can look forward to dishes like:

  • Sarson ka Saag: A traditional North Indian dish, paired with makki di roti, representing Punjab’s hearty cuisine.

  • Peshawari Chole: A rich and earthy dish from the northwest, packed with flavour.

  • Mutton Rogan Josh: A Kashmiri classic that is both aromatic and flavourful.

  • Assamese Fish Curry: Fresh and subtly spiced, highlighting Assam’s unique culinary traditions.

  • Naga Style Chicken: A northeastern dish that’s simple, yet bursting with flavour.

  • Yakhani Pulao: A fragrant rice dish showcasing regional cooking techniques.

  • Kharda Chicken: A bold, spicy favourite from the heart of India.

  • Gharwali Dal: A comforting dish from Uttarakhand, perfect for any meal.

  • Puran Poli: A beloved Maharashtrian sweet, rounding off the meal with a sweet note.

CHEF’S TOUCH

Asked about his favourite dishes from the brunch menu, Narasinh mentions Naga Style Chicken and Assamese Fish Curry.

“Both dishes are simple in their use of spices, but carry a deep, robust flavour. They stand out because they truly represent the essence of their cultures — focused on quality ingredients and traditional cooking methods,” he reveals.
