“It’s basically a homemade food service, available in Arambol up to Mandrem, and it’s all sattvic food,” says Rajat. Unlike the food that’s served at the restaurant, where people order, and it is placed on the table, to avail Rajat’s food, one needs to place an order a day in advance.
“That way we ensure there’s no wastage,” he highlights, adding that his daily menu service offers lunch and dinner. “After informing the customers what I’ll be preparing tomorrow, they confirm with a payment if they want to order, and the delivery is done the next day,” Rajat explains the ease of the process.
He does both — prepare as well as deliver the meal. Explaining how the energy behind the act of cooking has a significant role, he says, “We believe in Ayurveda, you know if you’re angry and making the food, the same energy passes to the food and the person who is consuming it. So that’s why you like the food that your mom makes, as it’s done with love.”
And what’s on the menu? Rajat answers the question with the names of mouth-watering dishes like Shahi Paneer, Palak Paneer, Aloo Sabzi and gobi. “I’m from Delhi, but settled in Goa seven years ago. These dishes are all North Indian, so it's proper homemade food. Whatever you’d get at home, you’ll get at our place,” he shares.
The best part about the tiffin service is that no dish is repeated, at least for a few days. “We don’t repeat our dishes. The dish that we are preparing today, we will be making one month later,” he adds.
Having started this food service around two to three years ago, Rajat is keen to avoid compromising on quality. He focuses on using healthy ingredients and avoids synthetic food colours or other substances typically used to enhance flavour.
“We don’t use aluminium utensils, instead, we use mitti ki handi. We follow sattvic recipes to prepare the food, and our focus is on preserving nutrition rather than just providing food for profit. So, the nutritional value (of our meals) is very, very high,” he claims.
Priced at around Rs 150 to Rs 200 for a meal, you don’t get a traditional thali, but a thoughtful combination of roti-sabzi, dal-rice or dal-roti.
“For now, my main focus is on building a repeat customer base. I have monthly tiffins, where customers, especially those working remotely, pay once a month, and we keep providing them with fresh, home-cooked meals.”
“People sometimes call and ask for specific items, but we don’t do that. If we start accommodating every individual request, we’ll end up having to store gravies in the fridge, and that’s something we avoid at all costs. We don’t use a fridge for our meals, everything is prepared fresh, keeping the quality intact,” he adds.
