In a chat with Gomantak Times Digital, Dinesh Rana, executive chef at Nora’s Cantina said that a meal should be more than just food on a plate—it should tell a story. 

“The Sunday luncheon is a tribute to the vibrant coastal flavours of Spanish and Portuguese cuisine, seamlessly blending tradition with Goa’s abundant seafood heritage,” Dinesh says. 

Every dish is crafted with fresh, locally-sourced ingredients to ensure that the flavours remain bold, authentic, and indulgent while still catering to modern palates.

Dishes guests will be able to enjoy this weekend include crudites served with cocktail sauce, Tomato and Bocconcini Salad, and a hearty Ensalada Rustica.

Chef Dinesh adds, “Every dish is crafted with fresh, locally-sourced ingredients to ensure that the flavours remain bold, authentic, and indulgent while still catering to modern palates.”

Besides these dishes, there will be a live carving station presenting flavourful specialties like Chicken Rissois with Balchao and Lamb Petiscos with Tomato Salsa, while the nacho station tempts with avocado, exotic vegetables, cheese sauce, spicy pineapple salsa, tomato salsa, and chimichurri.

“We wanted to break from the predictable, and create something truly distinctive," says Surajit Chatterjee, General Manager of the Novotel Panjim property.

He adds, "Instead of a standard buffet, we’ve designed a concept that allows guests to enjoy the best of both worlds: a carefully curated spread of starters and desserts for self-selection, while the main course is brought fresh to the table.”

As guests are allowed to choose, he believes that this will be the start of a pleasant Sunday brunch.

“This approach ensures that every meal is not only delicious, but also effortless, allowing conversations to flow, moments to linger, and Sundays to be spent the way they should be — unhurried, indulgent and truly memorable,” he smiles. 

For the mains, dig into a comforting shepherd’s pie and Paella Española Verduras, or explore the live quesadilla station. At the grills, chefs have succulent creations such as the Lamb Rosemary, Chicken Jerk Spice, Mackerel Peri Peri, Arabic kebabs, and much more.

End the meal on a sweet note with deep-fried Choux coated in cinnamon sugar and spiced chocolate sauce, carrot walnut cake with Orange Pineapple Salsa, and Sicilian Cannoli with sweet ricotta, orange filling and orange sauce.
