Over the years, there's been a shift in people's eating habit. It's done a180-degree turn from fast food to healthy food due to increasing awareness on lifestyle-related illnesses. People now follow strict fitness and diet regime. They are doing this by being careful of what they eat and constantly watching their calorie intake. This rooftop salad bar will healthily satisfy your cravings. Karovi has been born from Rohan Dutt's passion for creating dishes without preservatives. Dutt has always steered clear of fast food and processed food.

Dutt shared that the idea of starting a salad bar germinated while he was training at one of the ITC hotels in the Garde Manger section post graduating from Dr Ambedkar Institute of Hotel Management (AIHM) in Chandigarh. He was completely taken in by how creatively salads and dishes were prepared, driving him to bring his idea to fruition.

But his dream of a salad bar languished in the cold storage till he was forced to quit his job at a Goan restaurant that was hit by the impact of Covid-19.

Dutt had always been aware, besides 5 star hotels, there were very places that specialised in salads. And when it came to Goa, the choices for salad bars were even fewer. All this goaded him to turn his attention to his idea of setting up restaurant with wide choice of salads.

He started by setting up a salad takeaway counter but soon realised this business model would not work for salads as crispiness and freshness of ingredients were very essential. These two things were very important for preserving the taste and healthiness of salads.

And so, Dutt dived fully into his salad bar idea and Karovi came to life. At Karovi, there is an extensive choice of around 28 international salads and pickled vegetables.

And there are so many ways to eat them - you can club it with a sandwich, a burger or an appetiser. Nothing greasy or cooked on gas stove is served here. If, at all, something needs to be fried, it is done either by air frying or baking.

Dutt's attention to healthy eating doesn't end here. He has roped in his friend and mentor chef Helena Soina, from whom he has learned to bake breads, to bake breads like brioche, focaccia and panini. The aroma of freshly baked breads fill Karovi, whetting customers appetite.

The restaurant's penchant for serving healthy items spills over to drinks too. On the drinks menu, you have the regulars like the tea, coffee, along with milkshakes and special peppy soda. You can club healthy food and drinks with fun at its 8-ball pool area.
